Before we dive right into these perfect breakfast sandwiches, lets talk about life. Ah, life. It just seems like there is always something to do or somewhere to be!
Before having kiddos in the house, the busy go go go lifestyle was not nearly as big of a deal. We could totally handle the chaos like champs. But when there is a toddler (or toddlers) in the household go go go just doesn’t seem to mesh well.
First of all, it takes a ridiculous amount of time to pack up the diaper bag just so you can leave the house for a few hours. Diapers. Sippy cups. Snacks. Books. Toys. Change of clothes. Blanky. Diaper wipes. Oh and don’t forget to pack more snacks!
Secondly, it doesn’t seem fair to drag a kiddo (or kiddos) all over the place when all they really want to do is stay home and cuddle. They like routine. They like structure. And they really truly need both of those things to maintain the sanity of everyone involved.
Anyways. With all of the holiday go go go over last weekend, we don’t have any laugh out loud stories to share with you, but we do have a super simple and tasty recipe for Perfect Breakfast Sandwiches we know you are going to love.

- 1 Ciabatta bread
- 2 slices of bacon
- 1 eggs
- 1 slices extra sharp white cheddar cheese
- 1 tablespoon light mayo
- Cook bacon in a skillet over medium-high heat, then place on a plate lined with paper towel to drain grease.
- In the same skillet, cook eggs for about 2-3 minutes (or however you desire). While eggs are cooking, spread mayo on bread. Top with bacon, egg and cheese then toast sandwich in a Panini maker or toaster until cheese is melted.
- Serve immediately.
