Homemade Granola Yogurt Parfait
These parfaits are the perfect homemade breakfast to take with you in the morning. They are also a fantastic way to end your day, acting as both a delicious breakfast and dessert. Not many foods can do that!
Luckily, making a yogurt parfait at home is quite easy. It only takes a matter of minutes to put together.
Of all the parfait recipes out there, this one is definitely the best. Thanks to the no-bake, gluten free granola, the creamy Greek yogurt and the ability to add fresh toppings, this parfait has it all! With this recipe, you are totally capable of creating a picture perfect, drool-worthy parfait!
This parfait is full of protein thanks to the peanut butter and yogurt. It contains fiber from the oats and has all the amazing health benefits that come with the addition of fruit. There is a lot of nutrition in each of these glasses.
Easy No-Bake Granola
The recipe starts off with a very easy granola that you may want to make extra of just to have on hand (it is great on top of ice cream, with milk or just as a mid-day snack!). The granola is made simply by blending rolled oats, chocolate chips, peanut butter and honey together. The honey and peanut butter are heated in the microwave to make them softer and easier to mix.
However, you can skip this step if needed. While many granolas need to be baked in order to help them solidify and get crunchy, we prefer ours to be nice and soft. In addition to making the texture of the granola much more delightful, no oven means zero cooking time.
Once you have your ingredients mixed, the granola is done. It will get a little stiffer as it cools because the peanut butter and honey are returning to room temperature. This is a good thing, though. You will then get nice granola pieces that you can scoop with a spoon as you eat the parfait.
Gluten Free Granola
Since the main ingredient in the granola recipe is rolled oats, the granola used in this parfait is completely gluten free. However, you should always check your oat container carefully to be sure it is marked as gluten free oats.
Occasionally oats are processed or packaged in the same facility as gluten products. But they should be clearly marked as such.
Peanut Butter, honey and dark chocolate chips are usually pretty safe and rarely have traces of gluten. Check your oat container and the nutrition label, and then continue on with the recipe knowing that you are creating a delicious, gluten free breakfast (or dessert!).
How To Make a Parfait
Once you have made your homemade granola, it is time to assemble your yogurt parfait. The main idea behind a parfait is to create layers. Not only does layering the ingredients create a beautiful dish, but it also lends to the overall texture and taste of your yogurt parfait.
Having a layer of fruit followed by a layer of Greek yogurt and then a layer of granola will give you a whole variety of textures and flavors in each spoonful. Be sure to choose a parfait glass that is clear so you can easy see the pretty layers!
To begin, place a scoop of the Greek yogurt in the bottom of the parfait glass. Top this with your choice of fruit. We love using fresh berries, sliced bananas, and even mango chunks.
You can choose your favorite fruit or berry to layer in- make the yogurt parfait your own creation! If you do not have fresh fruit on hand, you can use a Greek yogurt with fruit already mixed in as a substitute. Fruit yogurt can be just as delicious!
You probably already guessed that the last layer of the parfait will be the homemade granola. Scoop a nice portion of that peanut buttery, honey oat mixture right on top of the yogurt parfait as the finishing touch.
Keeping the granola on the top of the dish will also help prevent it from getting soft or soggy. That can happen if it is buried under the Greek yogurt or berries.
Storing Your Yogurt Parfait
Yogurt parfaits are best when eaten right away or fairly soon after they are assembled. The longer the dish sits, layered in the glass, the softer the granola will get and the more the fruit will soak into the yogurt.
That being said, you can definitely make a parfait in the morning and enjoy it later that night. It will still taste delicious! Simply cover with plastic wrap and place it in the fridge until you are ready to enjoy.
You can also prepare the granola in advance and assemble the parfaits when you are ready to eat them. Have the Greek yogurt, fruit and granola made and available. Then it will only take a matter of minutes to put everything together.
The homemade granola can keep stored at room temperature in an air tight container like one of these here for up to a week. Place it in the fridge and it will stay fresh for up to three weeks!
You should definitely make extra. There is always a need for granola and it is such a great food to have on hand!
Create Your Own Parfait
While our yogurt parfait recipe is totally amazing, there are a few ways you can change it to make it your own. You can be like a chef, experimenting and creating recipes for a food that you love! Give a few of these options a try:
- Substitute the peanut butter for almond butter
- Add shredded coconut flakes to the granola
- Use fat free yogurt
- Stir a tablespoon of flax seed meal or chia seeds into the yogurt
- Opt for a sugar free yogurt to cut back on sweetness and calories
- Switch up the fruit- blueberries, strawberries, raspberries, bananas, diced apple, chopped peaches…almost any fruit will work wonderfully (especially any kind of berry)!
- Frozen berries work as well, just be sure to thaw them first.
- Add a teaspoon of vanilla extract to the melted peanut butter and honey for a richer taste
- Stir in a scoop of protein powder to the yogurt for a protein packed treat

FOR THE GRANOLA
- 1 cup rolled oats
- ¼ cup peanut butter
- ¼ cup honey
- ½ cup dark chocolate chips
FOR THE PARFAITS
Add in whatever you want! For the parfait in these pictures, we used vanilla Greek yogurt, raspberries, banana slices and a crumbed Lemon Honey Muffin.
Instructions
- To make the granola, mix oatmeal and dark chocolate chips in a mixing bowl. Melt the honey and peanut butter in a small glass bowl for about 20 seconds in the microwave then pour over oat mixture. Mix until combined.
- To make the parfaits, put ½ cup of Greek yogurt in the bottom of a mason jar. Add a layer of sliced bananas/berries then top it off with a heaping spoonful of the granola mixture.
