Let’s talk a little bit about food prep and meal planning. It sounds a little overwhelming at first, but if you can wrap your head around these concepts, it is going to tremendously improve your life!
So first things first: you do not have to be on a diet to spend a little time prepping food on the weekends. We actually avoid that dreadful d-word at all costs! This is simply doing a little planning and prep work in advance so that you and your family can enjoy more delicious meals made with fresh ingredients.
Of course, there are challenges that come with meal planning (we will tackle that another day) but even just a little bit weekend food prep will be 10x worth the effort!
Instead of diving right in, I decided to test the waters and spent just a little bit of time on food prep this weekend. First up, chopped Brussels sprouts and asparagus. One night we roasted them in the oven, and one night we sauteed them in a stir fry.
I also mashed up 2 avocados (with a little bit of lemon juice) to use on toast and/or eggs in the mornings. The lemon juice adds a little flavor and keeps the mashed avocado from turning brown. This step alone has made our mornings far easier!
The only other things I prepared were hard boil eggs (for snacks + salads) and a few oranges (for snacks + sweet cravings!). All of this only took about 30 minutes from start to finish including stopping to take pictures for you guys!
This weekend was minimal effort just to get started without overwhelming myself. And so far, I am totally hooked on the concept of weekend food prep! Even just this little bit made our week of meals easier and healthier.
