Want to make light, fluffy and filling pancakes? Then this is the recipe for you!
Ingredients
- 1/2 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 1/4 cup sugar
- 1 teaspoons baking soda
- 1/2 teaspoon sea salt
- 1/2 teaspoon cinnamon
- 1 cup milk (or almond milk)
- 4 tablespoons butter (melted)
- 1 teaspoon vanilla
- 2 eggs
Instructions
- Whisk eggs, butter, milk and vanilla in a large mixing bowl. Add in flour, sugar, baking soda, salt and cinnamon. Mix until batter is evenly combined. It is ok if the batter is a little bit lumpy still.
- Heat a large skillet or griddle to medium-high heat. Drop 1/4 cup batter onto hot griddle and cook for about 2-3 minutes. Flip the pancake and let cook for another 2-3 minutes or until cooked through.
- You can cook several pancakes at a time depending on the size of your skillet or griddle. Serve immediately with toppings of choice.
