Ingredients
- 2 1/2 cups water
- 1 1/2 cups jasmine rice (or other kind)
- 1 teaspoon olive oil
- 1/2 bunch of fresh cilantro (chopped)
- juice of 1 lime
- sea salt + black pepper (to taste)
Instructions
- Bring water to boil in a large sauce pan. Add rice, cover and reduce to low heat.
- Let simmer until all liquid evaporates (about 40 minutes). Leave the lid on the pot and remove from heat. Let sit for an additional 15 minutes.
- Remove lid. Fluff with fork. Add lime juice, olive oil, salt/pepper and cilantro. Mix until evenly combined then serve or store in refrigerator for later.

Pro Tips:
- While cilantro and coriander both come from the same plant, they are two very different herbs. However, lime and coriander rice is fantastic as well! Swap the cilantro for 1 teaspoon dried coriander seed for a whole new and exciting rice recipe. You may love coriander and lime rice even more.
- If you do not have lime juice on hand, use lemon juice in its place. Fresh lemon juice will give the dish a different taste but still be bright and flavorful, pairing well with the cilantro and rice.
- To reduce the cooking time of the rice and also ensure that it cooks perfectly, make the rice in a rice cooker, following the manufacturer’s directions regarding cooking time and quantity of water needed.
