Ohhh you guys are in for a treat. A berry special treat. Not funny? Eh well it was worth a try.
Anywho. Super Simple Paleo Berry Crisp is amazing but it will not last long. Trust me on this one!
The berries are quite beautiful are they not? This pan of deliciousness contains four (yes four!) kinds of berries: blackberries, raspberries, blueberries and strawberries. Four. Just look at those bright cheerful colors. It is actually a little embarrassing how many pictures we took of this but oh my goodness how could someone not see a pan full of bright colorful berries and want to grab their camera. Then take pictures. Lots of pictures. Enough pictures that it might possibly have started getting cold before it was served to everyone. Too many pictures. Eek. Embarrassing.
As for the whole paleo part. Well yeah about that minor detail. Paleo means a lot of things to a lot of different peeps right? Some people are strictly eggs, fish, meat, veggies, nuts and fruit. Other people add in things like stevia, coconut flour, arrowroot powder, etc. Things that are kind of processed but still technically clean foods. It can all be so confusing. Why can’t food just be food?
As for us? You should know by now that we are big believers in healthy balanced eating with a mega emphasis on fruits and veggies and a mega de-emphasis (you know what I mean right?) on the processed crap. So of course we like to Pay-lee-oh-fy dessert recipes as much as possible because it automatically ups the nutrition value and downs the junk stuff. And yes, the above statement is scientifically validated to be true.
So whether you are craving a little treat or a berrrry special treat (still not funny? eh I will keep trying!) Super Simple Paleo Berry Crisp is the PERFECT way to sneak in lots of nutrition from the bright and beautiful multi-colored berries while still satisfying your sweet tooth.
- 4 cups fresh or frozen berries
- 1 cup almond flour
- ¼ cup coconut oil (at room temperature)
- ¼ cup honey
- 1 tsp. Cinnamon (optional)
- Preheat oven to 375 degrees and spray an 8x8 pan or a pie pan with non-stick spray
- Place all of the berries evenly across the bottom of the pan
- In a small bowl, mix the flour, oil, honey and cinnamon with a fork
- Layer the crumble mixture evenly across the berries and bake for approximately 30 minutes or until the crumble is slightly golden brown
