These Apple Cinnamon Muffins are my go to muffins of choice. No joke – I have the recipe memorized like the back of my hand. They are simple, delicious and naturally sweetened so it is totally ok when my kids have 2…or 3!
Try making a double batch and keeping them in the freezer. They defrost beautifully by snack/lunch time!

Skinny Apple Cinnamon Muffins

Description
These muffins are nice and dense and have a perfect texture that you are sure to love.
Ingredients
- 2 cups almond flour
- 1/2 cup oat flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 cup unsweetened applesauce
- 3 eggs
- 1/3 cup maple syrup
- 1 teaspoon vanilla
Instructions
- Preheat oven to 375(F) degrees and prepare a muffin pan with non-stick spray. Mix all of the dry ingredients in a medium mixing bowl.
- Place all of the liquid ingredients in a blender and blend for about 30 seconds. Combine the blended liquids into the dry ingredients then evenly divide batter into prepared muffin pan.
- Bake 20-25 minutes or until the tops are light golden brown. Let cool before servings.
