We are always trying to come up with new ways to feed our kiddos healthy foods that might possibly spark more of an interest in eating. These Healthy Monkey Muffins were definitely a success seeing as how the entire batch was gone in just a few days.

Healthy Monkey Muffins

Description
The tastiest gluten free muffins around that are quick to make and loaded with incredible flavor.
Ingredients
- 1 cup almond flour
- 1 cup oat flour (or put 1 cup oatmeal in your blender to grind)
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup vanilla Greek yogurt
- ¼ cup applesauce
- ½ cup plain almond milk
- 2 eggs
- 2 ripe bananas
- ¼ cup peanut butter
- 2 teaspoons vanilla
Instructions
- Preheat oven to 375 degrees and spray a 12 cup muffin tin with non-stick spray
- Combine almond flour, oat flour, baking powder and salt in a medium mixing bowl and set aside
- Place the rest of the ingredients into a blender
- Blend the mixture on high for about 30 seconds or until smooth
- Stir the blended mixture into the mixing bowl with dry ingredients
- Evenly divide the mixture into the prepared muffin pan
- Bake for approximately 30 minutes or until the edges are light golden brown
- Carefully remove from the oven and let cool in muffin pan for a few minutes before eating

How much almond flour & oat flour? Am I missing something (I very well could be!)? I don’t see the flours listen in the recipe.
Farah, I’m sorry about that! I just fixed it–somehow it cut out the 1 cup of almond and 1 cup of oatmeal flour. Thanks for letting me know! 🙂
Can it be made without peanut butter I’m allergic to peanuts
I would use another nut butter in its place. Almond butter would taste great.
