Well, Fall is definitely here. Kids are back to school (sent my baby to kindergarten this year…sob, sob), the temperature is dropping, and every where I look, there are pumpkins and apples. Fall is my favorite season by far. I love having to put a sweater on first thing in the morning…and truth be told…I’m ready to put those bathing suits and shorts away until next year 🙂
With fall comes all my favorite flavors…especially in coffee. New England Coffee’s seasonal flavors, Pumpkin Spice and Caramel Apple are available now (both in single serve cups and bagged ground)..and just in time to kick off my favorite season. This fall, New England Coffee company is kicking off their centennial by celebrating their customers with the #YouAreExtraordinary campaign. We are thrilled to be able to be a part of this campaign and to be able to talk about their amazing coffee…which I am in LOVE with by the way. The folks at New England Coffee would like to invite everyone (including our fabulous readers) to celebrate extraordinary people in their lives by posting a photo on the You Are Extraordinary gallery at extraordinary people. Take a minute and think about someone amazing in your life and post a comment below, you’ll be entered in a sweepstakes and have a chance to win some delicious New England Coffee!
So, I’ve got a great recipe that uses some leftover brewed coffee that I think you’re going to love. The inspiration for this dip comes from one of my girlfriends (who is pretty extraordinary by the way) who made it for a party a few weeks ago. Everyone loved it, including me, and so I decided to tweak it a bit and incorporate New England Coffee’s fall flavor Caramel Apple into the recipe, and it’s a total win. I’ve made this recipe a few different times, and I have to say it’s pretty amazing. The original recipe that came from my friend used confectioners sugar. I swapped the sugar out for a few tablespoons of honey and the result is a lightly sweetened cannoli dip that works well on fruit, toast, waffles, or even graham crackers.
This morning I had it on our Zucchini Bread, and it was to die for. Perfect for a party…or a fun addition to any brunch. I have to say that for something that sounds so sinful, this recipe is totally healthy. I used whole milk ricotta cheese, cream cheese, honey, vanilla, and a few tablespoons of brewed coffee. I used the Caramel Apple coffee for the post, but I’ve tried it with the Pumpkin Spice flavored coffee too and it’s amazing. Give this one a shot, and don’t forget to check out the sweepstakes from New England Coffee. Enjoy!
