Gluten Free Peanut Butter Brownies
Recipe type: Dessert
Cuisine: Gluten Free Brownies
  • Brownies:
  • • 6 Tablespoons Butter
  • • ½ cup Sugar
  • • 1¼ cup mini semisweet chocolate chips
  • • 2 eggs
  • • 2 teaspoons Vanilla
  • • 1½ Tablespoons Cocoa Powder
  • • 2½ Tablespoon Tapioca Flour
  • • ½ teaspoon Salt
  • Peanut Butter Frosting:
  • • ¼ cup creamy peanut butter
  • • 1 Tablespoon Melted Butter
  • • ¼ cup Powdered Sugar
  • • ¼ teaspoon salt
  • • 2 teaspoons Vanilla
  1. In a small saucepan over low heat, melt the butter. Once melted, add the sugar and stir. Then add the mini chocolate chips to the butter and stir quickly to melt the chips. Continue stirring until the chips are fully melted and mixed in with the butter. Remove from the heat and pour the melted chocolate mix into a medium bowl (you can also keep it in the saucepan if you want less dishes!).
  2. Add the vanilla and eggs to the chocolate and mix thoroughly and quickly.
  3. Sift cocoa powder and tapioca flour into the saucepan with the chocolate mixture. Add the salt to the chocolate as well and mix everything together.
  4. Pour the brownies into a well greased 8x8" square pan.
  5. Put the brownies into a 350 ̊F oven and bake for 25 minutes and remove from oven.
  6. In a new bowl, make the peanut butter frosting by mixing the peanut butter, melted butter, powdered sugar, salt and vanilla together with a rubber spatula. Spoon on to the top of the brownies in the pan and using the rubber spatula or small metal offset spatula, spread the frosting on top, covering the brownie completely in peanut butter frosting.
  7. Allow the brownies to cool in the pan and then move to the refrigerator. They will be a lot easier to cut when very cold!
