Ingredients
  • 1 banana, mashed
  • ½ cup pumpkin puree
  • ⅓ cup honey
  • 2 tsp vanilla
  • 2 tablespoons coconut oil (melted)
  • 1 cup oatmeal
  • ¼ cup ground flax seed
  • ¼ cup almond flour
  • pinch of salt
  • 1 tsp cinnamon
  • ½ cup shredded unsweetened coconut
  • ½ cup dried cranberries
  • ½ cup dark chocolate chips
Instructions
  1. Combine the mashed banana, pumpkin, vanilla, coconut oil, and honey in a large bowl.
  2. In another bowl, mix the rest of the ingredients.
  3. Add the dry ingredients to the banana mixture and stir until well combined.
  4. Spoon dough onto a baking sheet lined with parchment paper and bake at 350 for 12-15 minutes until cookies are lightly browned.
  5. Allow to cool before serving.
