Skinny Fried Rice

  • 1½ cups cooked and cubed chicken breasts
  • 1 (8oz) bag coleslaw mix
  • 2 cups brown rice (cooked) we use the instant version
  • 2 eggs
  • ½ white onion, chopped
  • 2 tablespoons sesame oil (divided)
  • 2 tablespoons soy sauce
  • ½ tablespoon rice vinegar
  1. Heat one tablespoon of sesame oil in a large pan over medium heat. Add onion and coleslaw veggies then cook for 1 minute.
  2. Add rice and chicken then cook for a few minutes. Turn to high-heat, add the other tablespoon of sesame oil and stir fry for a few more minutes.
  3. In a separate pan, cook the eggs for about 1-2 minutes or until just cooked. Add to rice and veggie mixture. Add rice vinegar and soy sauce and cook for 1-2 minutes more.
  4. Remove from heat and serve immediately.
