Perfect Blueberry Muffins

Serves: 12 muffins
  • 1 ½ cups oat flour (or put oats in the blender)
  • 1 cup almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • ⅔ cup unsweetened applesauce
  • 3 tablespoons honey (or agave)
  • 3 eggs
  • ⅔ cup fresh or frozen blueberries
  1. Preheat oven to 375(F) degrees and prepare a muffin pan with non-stick spray. Mix all of the dry ingredients in a medium mixing bowl. Place all of the liquid ingredients in a blender and blend for about 30 seconds.
  2. Combine the blended liquids into the dry ingredients then stir in blueberries. Evenly divide batter into prepared muffin pan. Bake for 20-25 minutes or until the tops are light golden brown.
