Simple Breakfast Hash Stir Fry

  • 2 potatoes, peeled and diced
  • 1 teaspoon olive oil
  • 1 package sausage links, cut into small pieces
  • 2 eggs
  • salt/pepper to taste
  1. Heat olive oil in a skillet over medium/high heat then add diced potatoes and salt/pepper.
  2. Cover and cook potatoes for about 10 minutes turning every couple minutes to avoid sticking.
  3. While potatoes cook, brown the sausage in a separate pan over medium heat until fully cooked.
  4. Divide the fully cooked potatoes and sausage into two serving bowls
  5. Use one of the skillets to cook eggs however you like (we love them over easy!)
  6. Add the cooked egg onto the sausage and potatoes and enjoy!
