My whole family liked this recipe a lot which is not easy with healthy food! Made the Mexican Rice and beans and loved that as well. Trying the black bean casserole next. If you have more bean recipes that would be great! Thanks!

I thought it was amazing, I’ve had rice and beans before and always wanted to make them but wasn’t sure how. I worked with Puerto Rican cook at one time and your version tasted pretty similar to his. I couldn’t have loved it more and my picky son and husband really liked it too!

In reply to SimpleGreenMoms. This would probably be considered a Mexican rice not Puerto Rican. If you look on YouTube there are lots of recipes. Sweets and Beyond is a good channel as well as Evelyn Dominguez (she has a lot of videos only in Spanish though but you may be able to get the gist of it). Sofrito is the core of Puerto Rican cooking so I would also look up a recipe for that as well. It's the basis for the majority of our recipes.
