I don’t know about you, but whenever I get a get breakfast at a bagel shop I love to get the flavored cream cheese…especially the veggie. I’m not sure why I never thought to make my own at home before, but now it seems pretty obvious! Cream cheese, veggies, herbs, food processor…done! Since realizing I can make this at home, literally any time I want, I’ve kept a batch in the fridge finding new ways to enjoy it. Of course, this spread is amazing on a bagel with coffee for breakfast. But lately I’ve been putting it on a toasted English muffin with a slice of tomato and avocado on top for a quick lunch. The kids love it spread on crackers or as a dip for carrots and celery for a quick after school snack.

- 16 ounces cream cheese
- 1 large carrot, peeled
- 1 stick celery
- ½ red pepper
- 1 tbs capers
- 2 tbs herbs (I use parsley and chives)
- Salt and pepper to taste
- Place all the veggies in the food processor and pulse until finely chopped. Add the cream cheese, herbs, and salt and pepper and blend until smooth.
