One bite and we were sold on these sweet little things. They are simple, quick, and delicious making them perfect as a pack-along snack!
These no bake cookies are naturally sweetened so they could easily pass as a healthier dessert option. Or even as a pre/post workout snack.
My all-time favorite place to take them is on road trips! We went to a Dave Matthews Band concert this past week and these were first on my list of things to pack!

- 1½ cups quick oats
- 2½ scoops chocolate protein powder (any kind!)
- ½ cup peanut butter
- ¼ cup unsweetened almond milk
- unsweetened coconut flakes (optional)
- Mix all of the ingredients together in a large bowl. Form mixture into balls, then flatten out to make cookies. Sprinkle with unsweetened coconut if you like.
