Dark Chocolate Parfait
We took our usual morning walk outside today and it started raining on us. So yeah that was fun. Outside of the dark grey overcast skies and the fact that it had been raining on and off all morning, we had no idea it was going to rain on us.
Thankfully we did not get completely soaked like a smelly wet dog or anything. Just a little dribble like we had ran through the sprinkler. However it was just enough that I am now sitting here shivering while trying to think of something to make my trembling fingers talk (or type) about. But instead, all my brain can think about is Goosebumps. And chocolate. Goosebumps and chocolate. Dark chocolate to be exact.
Dark Chocolate Parfait Recipe
Clusters of dark chocolate mixed with gooey peanut butter, oats and honey to be super exact. Layered over Greek yogurt and berries. Then topped off with a sprinkle of shredded coconut. Oh and don’t forget to crumble a scrumptious Lemon Honey Muffin in there too if you like. We like it a lot!
Chocolate Parfait with Breakfast
It’s like perfection in a bowl. Correction… IT IS perfection in a bowl. Dark chocolate perfection. So yummy whoop whoop! Oh and every bite of this deliciousness just happens to be gluten-free too. So yeah, you can feel good about eating chocolate for breakfast. Yup, you read that right… feel good about chocolate. Own it people! Own. It!
Dark Chocolate Parfait with Coffee
We like to own our No Bake Dark Chocolate Granola Parfaits with a nice cup of coffee on the side. I am telling you what, that is the way to go. Well, if you are into the whole coffee kind of thing of course. One mouthful of this yumminess and your mood will instantly be lifted to spectacularouso for the day. We have no idea what spectacularouso even means but since it involves no baking and a whole lot of dark chocolate, we love it!

So back to Goosebumps. How on earth did we go from Goosebumps to specatularouso? Yeah anyways… we recommend that if it looks mostly cloudy outside and it has been raining off and on all morning that you do not take your chances and go for a walk outside. Just stay inside and own yourself one of these No Bake Chocolate Granola Parfaits. Trust us on this one…. this is a much better choice than smelling like a wet dog after the rain. Yup.

- 1 cup rolled oats
- ¼ cup peanut butter
- ¼ cup honey
- ½ cup dark chocolate chips
- To make the granola, mix oatmeal and dark chocolate chips in a mixing bowl. Melt the honey and peanut butter in a small glass bowl for about 20 seconds in the microwave then pour over oat mixture. Mix until combined.
- To make the parfaits, put ½ cup of Greek yogurt in the bottom of a mason jar. Add a layer of sliced bananas/berries then top it off with a heaping spoonful of the granola mixture.
